Welcome to School Bus Driver Video Blog and this is the Recipe Section. A place where you can find recipes that are hopefully quick and easy for you to feed a family with and nutritional. Just take a look below and you will see various recipes I have tried and some I haven’t. But if you have, Please give your comments about them. Send then to: Brother Beno here Now, the recipes I hope are quick, easy and nutritional plus fun to make. There are other suggestions here like menu planning that crop up like that from time to time. So please take a look below and and enjoy your food, and as you can see I have no problem enjoying the food myself. To start this off, I would like to present to you a cooking trick I have used to introduce brown rice to my children. They were so used to white rice, to the point that when I showed them brown rice, they almost threw up. Doctoring it the right way, they ate it and wanted more. There are two ways of cooking brown rice that I have used successfully. The first method is to do as the instructions say, except I used one and a half times the liquid the recipe calls for (1cup=1 1/2cup). To add flavor from the start, I use a carton of chicken or beef broth, that you can purchase at the store. If more is needed, then add water to equal the one and a half measure of liquid needed. Do not add any salt as there is enough in the broth. Then cook(simmer) until it absorbs all of the moisture as the instructions direct. This will mean more cooking time, so be sure to watch it. But this gives a chicken or beef flavor to the rice and overcooking makes it softer and therefore more palatable to children’s tastes. If your childern still have a problem with the color then try adding grated cheese and melt in. The second way in which I cook brown rice is to use a crock pot. This can be put on before you go to work and should be done by the time you get home in the evening. Here again, you can also use broth, but normally I cook it just with the water. When it is done cooking, it can stored in the refrig and when needed I put some on a plate, add grated cheese to it, blended in and microwave for 45 to 60 seconds (until melted through). This should start giving you some ideas on ways to cook brown rice. I have found that cooking brown rice on the stove top takes a longer time and should be only done during a weekend when you have the time to hover over it to watch it. Otherwise I would suggest using the crock pot method. What I have also done is thrown into the crock pot raw vegetables with the rice as well as meat making a one dish meal. Of course this is what crock pots are well known for. I do not recommend using white rice for the crock pot method because it will turn out mushy and you’ll basically have just paste. This paste thing can happen with the brown also if you cook it on high for a long period of time (past 8 hours). So if you are to be gone for over 8 hours cook the rice on low.
